crab cakes
½ cup mayo (kewpie)
1 egg
2 tablespoon Dijon
2 tablespoon Worcestershire
2 tsp. Tabasco
1 lb crab meat
Half a jalapeno – minced
25 or so saltine crackers
Zest from a lemon
Mix all ingredients and lightly fold in crab meat – let rest for at least 30 min in the fridge before making cakes. Pan sear cakes in neutral oil, about 3 minutes per side
remoulade
1 cup of mayo
2 tablespoon Dijon
3 tablespoon Worcestershire
3 tablespoon chives, chopped
3 tablespoon lemon juice
pinch of cayenne
zest from a whole lemon
salt & pepper
Mix all together

Olive Oil
Peppercorn – handful, toasted and cracked
Salt
2 filets
Veg/canola oil for searing – s&p
Butter, garlic, rosemary, and sage to baste the steak.

1 bulb roasted garlic
pinch of cayenne
salt & pepper
tarragon
dessert
chocolate covered strawberries
a dozen strawberries
baking chocolate
Melt chocolate and dip in strawberries. Cool for at least 30min
